My friend Lisa sent me this recipe last night. Being a big fan of nachos, I was on it fast, as I already had all of the ingredients. Looking at the ingredients...you'll notice potatoes and carrots...whatttt? She was very confident in how good it is and rightfully so, as I really enjoyed it. It seriously has all the qualities that you'd look for in good queso. I added a bit more lemon juice, a tad of cumin, and spiced it up. I'd also soak or blanch for a minute the cashews beforehand, next time. I'll definitely use some jalapenos or green chiles next time, as well.
